Air fried "Cheat One" KFC Chicken

Received quite a number of messages to share my recipe after posting this photo in my IG and FB, and I thought, I might as well blog about it and get some page views! Hehehheehhe






I got the original recipe from here and here but if you're really lazy to click and read, here's a simplified version.
 
1. Marinate your chicken with salt and pepper for at least 30 minutes in the fridge.

2. In a large bowl, mix in
- 1/2 cup of Panko bread crumbs
- 1/2 cup all-purpose flour
- 1/2 teaspoon of Paprika powder
- 1/2 teaspoon of Curry Powder (Because I don't have Cayenne Pepper and I love the aroma of Curry Powder)
- 1/4 teaspoon of Pepper
- Pinch of salt 

Actually.... I always simply antam / agak-agak / eyeballed the quantity but for some of you who prefer to cook with the precise quantity, you better check other recipes. Hehe. 

Also, I think you can simply add any herbs you like.. Trial and error mah. Who knows you create an even better fried chicken leh.

3. Preheat the airfryer to 200°C

4. Pour milk or buttermilk in a shallow bowl.

5. Dip chicken in milk and then roll it in the flour mixture. Repeat if you can a thicker coat and crispier bite.

6. Put your chicken in to the air fryer and fry for 10 minutes at 200°C.

7. Check for white spots of flour and brush oil over it. Well, you can brush the whole chicken thigh or drumstick if you want but if you choose airfrying it, of course you prefer using less oil right?

8. Another 10 minutes at 150°C to make sure the chicken cook through
(Because I kiasi, I used 15 minutes instead)
 

I tell you, my kitchen smells so so so so good even air frying these chicken and it's so much easier to clean the air fryer than to wash the wok, clean the stove and the wall after deep frying. Somemore no need jaga api.

Actually it wasn't my first time trying these air fried chicken. 




The first batch kinda failed because:

1. Instead of milk, I used egg wash and langsung tak crispy lahhhhhhhhhh......
2. I didn't have any panko too, not that it matters much but still.....

Week 20, the week full of surprises, love and smiles.

Seriously, my week 20 was so awesome that I sometimes dread that maybe unlucky thing will come soon because you know… the balance of life dafuq.

First of all, my best friend 48 came back for a super short holiday. Not really a holiday la, she came back to visit her sick grandma. But still, I felt that I already untung that I was able to see her after 1.5 years we last met.

Oh ya, before that, I had a great fall while taking my casual stroll around the neighourhood…

It was really really bad…. And the story behind it, you would laugh when I  told you how Badd (my kanasai friend) poured antiseptic to the wound and how loud I yelled in Wisma Yakin!


A week later…

The scabs had all came off now leaving really ugly scars. Need a lot of whitening ni!


Celebrated our 8th Paktohversary. This time we opted for something different. Instead of picking a nice restaurant, I whipped up a meal from scratch because he complained I hadn’t made him sushi for a long time. (It was.. 7 years ago)

The menu, Deep fried soft shell crab, bacon wrapped scallops (these two I super proud of myself) and the rest… the usual stuffs.

We were sitting on the big rocks and I plucked a leaf and did that green mustache thing. They laughed and I forced them to do the same too! I was like, you guys so sweet lah, always layan me one, not afraid of sia-soi-ness and SL murmured cheh, andang sia-soi don’t know how long liao lah when you (me) around.

True friends huh.

Went to Modesto (in Batu Bersurat) with the Garden Circlings because Pingko said she wanted to belanja us because she just got her first pay from the new work place. Was very disappointed at the food, like seriously seriously super very the disappointed!

(They have a page in the menu dedicated to vegetarians as above, but those with red stickers are currently unavailable. Bagus ihh!)

Turned out the dinner date was actually a secret plan plotted by Bobby to propose.

It felt so unreal…. I was yu-mou-lun-chi (dunno dafuq was I saying) after the proposal and did a super sia-soi thing. I yelled, showing my finger, "I’M FINALLY ENGAGED!!!!”

Thank you for the lovely surprise my dear fiancé, esehman!

I said it earlier and I’m going to say it again, dear 48, you sibeh lucky to get involved in the proposal hor. Hahahhahaa. But really lah, it was like a super bonus for me that she was there during this important moment of my life. Dear God, you sibeh nice to me lah. I promise you I will  .. okay, cant think of anything to promise. Nevermind lah, next time ya.


Made this infinity dress yesterday (tutorial over here) and love the result so much! Though it is a little too short but still, at least it looks wearable! I only measured and cut, mom did the sewing because I am really bad with the sewing machine when it comes to this lycra fabric.

Banana Choco Chip Muffins

When Chef Wan signed his autograph on the mini cookbooks set for me, he said with a heavy sigh that he really wished that people who bought his cookbooks will try his recipes and not just put it on the shelf as display. And I did! For a start, I picked the easiest one…

I’m usually bad in making sweet treats because:
1) I’m not much of a sweet tooth
2) Unlike cooking that I can just pause, taste and adjust to my liking and be creative with ingredients
3) No one knows whether the cake/cookies/tarts/pie will be a success until you shove it in to the mouth!

I forgot (intentionally) to buy muffin cups and I remember seeing recipes from my pie maker that it can be used to bake muffins as well, so I put my beloved pie maker in to good use!

Big big thanks to 48, who hand-carried it back for me from kangarooland!
Every time I use also must feel grateful for having such awesome best friend (who doesn’t go online a lot these days and yes! CCM! I iz complaining you! Hahhaha. Got buy me souvenir from Fiji or not?)

Fried Pasta with scrambled eggs

Bobby has this… “creative” touch when it comes to cooking, in a bad way, which I would use the word “uncanny” for it. Really, uncanny combinations.

The very first time he volunteered to cook dinner for me was back in his uni days. Boiled pasta + Campbells Mushroom Soup. That’s one dish for you. Then, fried shredded potato with egg, super lightly salted…

Just last week, he argued with me that pak-choy can be grilled. Yes! PAKCHOY! He wanted to grill PAKCHOY!

I don’t know… I googled up Grilled Pakchoy… (or Bok Choy), there IS recipe for grilled pakchoy (sorry for my lack of knowledge, or lack of time viewing AFC) and here’s what I found.

Anyways….

Then we talked about when was the last time he cooked something for me (August 2010 btw, this is why you should keep a blog because… everything is there!) and he came up with various combinations again, crazy food combinations. “I want to try fried pasta with scrambled eggs”.

I had to tell him to keep to the basic, just follow the recipe, you’re no Jamie Oliver, and guess what he said, “Why you no supportive one? Ba ba ba, I cook carbonara lah… Boring.”

So last Sunday, we went to Soon Lee to get the ingredients for carbonara and Bobby said he’s going to do everything himself, without my help. (Meaning to say, when he’s cooking.. I keep my mouth shut)

I volunteered to cook Cream of Broccoli, to go with the pasta, you know.. balance diet.

An hour later, he asked… cried (to be exact) for help in front of the stove… (Oh, I left out the lizard-in-the-pot part, will tell you all later about that)

Apparently, his “suppose to be creamy carbonara sauce” …. kelaie (is that how you spell), the eggs and milk just don’t want to be friends. Ya, that bad.

He was really disappointed with his cooking and he said he’s going to blame it on the lizard.

(Here’s the story. After boiling the pasta, Bobby wanted to strain it and while wanting to pour it out, he saw one baby lizard in the pot… Dead… i-wanna-puke-now-just-by-thinking-back…. Super phobia. We had no idea how the lizard ended up in the pot, most likely, it fell off from the ceiling? I’m not going to use the pot anymore. Period)

When I saw it served on the plate, I said…

“Wow baby, you actually achieved your goal of cooking “Fried Pasta with Scrambled Egg”… How did you do it? Got vision eh you.”

(Okay.. the last sentence I baru add in one.. very kanasai I know)

I’m sorry I have to blog about this because, this is like the most exciting/funny thing that happened to me last weekend and I definitely would like to remember this for the rest of my life, telling my kids that their father used to be, or maybe still is, a keh-kiang cook.

Good thing must share share mah.

(Bah, you all don’t laugh at Bobby so much ah, later he doesn’t want to cook for me anymore)

August updates / it’s all about food and happenings anyway

 

I seriously need to sit down and blog properly instead of inserting photo and just put captions but… I guess I’m just lazy like that. I’m only super semangat in blogging when it comes to my travelogue because I want to remember every single detail of it.

So here, 20 photos (plus stories) for you all to see. Nothing much but at least something right?

#1 – Hello Eric Leong!

Just checked the date of the photo taken and it’s on 30th July… err.. I know it’s not in August but nevermind lah, don’t so ji-jiao (calculative) mah.

Dragged SukChin to go to Raiyah with me but only spent 15 minutes in total seeing Eric Leong because we were wondering around each and every corner of the furniture shop instead of cramping with other guests in a crowded and dangerous place that I might potentially break something valuable.

He’s a funny dude. Well, I guess everyone who watches his shows knew about it but the quote I remembered most from him was when he was an invited guest for aiFM (Sorry Pilihan radio…) and said putting up curtains just long enough to cover the windows are like forcing your window to wear “miniskirts”. Funny not! Okay lor, I admit I have very low “laughing point”. It’s easy to make me laugh and I super layan lame jokes one.

#2 – Theen preparing her “stall” during the car boot sale

After my house’s mini renovation in June, I’d cleared out few boxes of unwanted stuffs and needed a garage sale so much! Then came this car boot sale in SMJA’s parking lot the rental is $50 for half the camp. I had to ask my friends to join me (out of karitness, plus.. I’m sure they have things to clear out from their store rooms too mah) and they super “on” also.

From the above picture, we all took one corner and set up our “stalls” respectively. AT 6AM! Money not easy to find I tell you.

#3 – How it kinda looked like…

You saw those nice photos of Colosseum and the streets of Paris? Joseph took them years ago during his trip to Europe with SukChin and they’re just trying their luck in selling them. They talked to quite a number of “potential customers” but I guess it was a wrong targeted crowd.

There was this one funny ah-pek when asked to buy the piece of art, answered this, “Buat apa? Banyak jua arah internet… Download sama print saja. Free lagi tu”

#4 – Bobby’s creation.

Bobby, being a sweetheart (but only at random times like this) prepared me brunch. Baked Potato + Brinjal + Cheese Sausage + sprinkled herbs.

In short, imma name it Bake PoBrinCheeSaHerbs!
Totally uncool for a dish name whattheflyingfish!

#5 -   My humble stall, and of course.. me indulging on the food.

Not bad la business, I brought 4 boxes up and left with one box nia. I guess some stuffs are not meant to be sold. Die die cannot sell out.

#6 – Other stalls only started to set up at like 9, 10am… Super hot already at that time.

By 12pm, we all gave up and packed our stuffs. Went back to SukChin’s apartment, took  a nice shower and headed out to TPH for late lunch.

#7 & 8 – Cheapskate couple who only go to Fratini when they’re having 50% off.

In Fratini Gadong branch. To be honest, I’ve never been to the Seria one also. Mahal bah. Who wants to eat in pricey restaurant when $1.80 kolomee, fried keuh tiaw, $1.50 french toast cheese are easily available wor? Posh restaurants can wait till anniversaries, birthdays and when people belanja. Hehehehhee.

#9 – Foamy hot Milo

So smooth and creamy! But $3+ for a Milo… *sweat*

#10 – Linguine Fratini (?) Sorry, can’t remember the name.

Something we always order because it’s wrapped in aluminium foil (kiasu, must be different from others) and plenty of seafood. Nice for 2 person.

#11 – Pizza, I don’t know what flavour.

Ate only 2 slices and the rest all sapu by Bobby the fatty bum bum. Don’t you just love a boyfriend who’s bigger than you?

#12 – My attempt in making meatballs.

Boiled some fussili and asked my favorite guinea pig to try it out. As usual, the verdict is good. And also my seafood chowder!

#13 – Not easy okay!

Sibeh many kungfu to prepare! Diced up potato, onion and carrot. Cooked them in a pot till they super tender. Add in the seafood, evaporated milk and simmer it. No cheese or cream needed. Okay, that’s like the summary of recipe. Of course you need butter to fry the veggies first.

I used crab sticks instead of crab meat because I couldn’t find it. Joseph said it’s Chinese style liao.. –_-“

Okay, as for seafood.. I had mussels, prawns, calamari and crabstick lor.

#14 – SL’s spaghetti carbonara

Smart guy. Cooked not so much and so everyone can finish it up! But, really really nice lor this one. Not creamy till very “wui”.

#15 – Suk Chin’s salad (tomato slice + mozarella cheese + basil leaf with balsamic vinegar!) super good! And also casserole.

I tell you, we’re all so talented in cooking can!

Those two tapao-ed pizza from Fratini has nothing to brag about lah.

In a claypot because my mom has no other pots. Joseph said this one Chinese style also, which.. I kinda agreed because it’s just like an angmoh version of 红烧狮子头!But the claypot was super good in keeping the heat.

Must re-heat in oven first baru can eat. But yummy nonetheless!

#19 – Excapade’s Takoyaki!

Do you know Excapade has takoyaki now? 6 pieces for $5! Love the egg salad and roe on top but, the takoyaki seemed deep fried for me, and not slowly grilled.

Hmm.. But I could be wrong.

#20 – Nonnie’s special porridge

I offered to cook Bobby breakfast last Friday and asked him to pick from English breakfast and porridge. Obviously, he picked the latter.

I wanted to cook shredded chicken porridge but can only find chicken wings in the fridge. So, I ended up mincing the “meat” myself.

Fried shallots, mushrooms and black fungus till fragrant. Add in the minced meat, then add the rice and water in.

Simple, but requires a lot of time to watch the fire.

And the cakoi… I where got so pandai know how to make them. You think too much liao. My mom bought them from Miri. The mini one. Hehehehe

Oh oh, the hot milo! I always add half cup of hot water and the other half, I use full cream milk. Can lower down the temperature and also add creamy goodness to it.

Foodie Bazaar

 

Yes, another foodies bazaar!

So far there’s 13 confirmed participants including me! I do hope that the sales is going to be good and also, I won’t be busy munching goodies from others.. which, I think it’s quite impossible.

There’s gonna be me alone at my humble stall so I guess that’s what I’m doing to myself to refrain from eating too much. Hahahhaa.

Apple Turnovers

 

Seems like our Sunday cooking plan is inevitable. Seriously, we didn’t even plan for it and somehow, we just decided to cook up a simple dish.

Earlier on, we checked out the public library and the “auntie” in me went to the recipe books section. I saw the recipe for Apple Turnover and showed it to Bobby because I know how much he loves Apple Pie, Apple Crumbles, Apple this and that. Oh, thank God he’s not an Apple evangelist~

We still had one piece of pastry sheet left from our previous pie-making session and apple turnover sounded great!

It was really really simple and this time, Bobby did most of the cooking. Since we only had one piece left, we only used an apple. He diced (in humongous size) while I melted the butter on the pan, threw in the diced yummies, simmered for a bit, add in some water, brown sugar and plenty of cinnamons!

Wrapped them up in the pastry sheet and shoved it into the oven~
